Celery, both roots and stems, are rich in vitamin C and minerals such as potassium, calcium, magnesium and iron. More significantly, these vegetables contain coumarin, which delays the devastation of free radicals in cells, thus reducing the risk of mutations and the chance of developing malignant formations. Because coumarin promotes white blood cell activity, it also increases protection against potentially harmful cells. Meanwhile, vitamin C and fibre present in celery roots help reduce blood cholesterol levels, while potassium, magnesium and calcium help lower blood pressure. This means celery is a precious enough vegetable, unmercifully forgotten in an age when so many suffer from cardiovascular disease.
