Leek leaves contain 52-81 mg of vitamin C; the fake onion has slightly less vitamin C. Carotene in the leek bulb is 3.7-5.1 mg%. The specific, onion-like smell and taste of leeks is given by essential oils. Leeks include pantothenic acid, amino acid - cystine and various bilogic active enzymes. Like all lily plants, leeks have strong phytoncide properties.
Leeks are used as an additive for various foods, soups, stews. Make a salad out of them, put on the sandwiches. Leeks enhance the flavour of fish soup, they are also added to fish and meat pies. Leek leaves are used for vegetable soups, stewed and added to sauces. Only boiled or stewed leeks with vegetable oil can be eaten during the days of relaxation, adding lemon juice.
Interestingly, when a plant is stored, the amount of vitamin C is increasing rather than decreasing.
Leeks are used for therapeutic purposes if there is rheumatism, liver, bile or kidney disease, abdominal constipation, atherosclerosis, anti-obesity. Leeks boost the body's immunity well, calm the nervous system, help against power exhaustion, weakness. Boiled leeks strengthen vocal cords well: slice one leek together with leaves, pour with 3 glasses of water and cook on a slow fire until the liquid halves; the contents are divided into 3 parts and drunk during the day.
Leeks are a cold-resistant plant. The optimum growth temperature is 16-18C degrees. Leeks also need lots of light, moisture, lots of nutrients. Sandy or clay-sandy soil suitable for growing leeks with a deeply irrigated arable layer. Very good leeks grow in lake and river slope soil, as well as in cultivated, limed peat soil.
Leeks are harvested from August to the end of October, when leaves start to sting slightly. The leek roots are highlighted with a garden fork and the fringe sanes have to be trimmed. the leaves are cut obliquely 10 cm away from the ethiocheted fake stem. They are used for soups. You can also make delicious soup from dried leaves in winter.
Leeks are also great for storage in the freezer. And retains its qualities perfectly.
If the leeks are scheduled to hibernate in the cellar, cut off the old leaves, but the roots are not shortened. In the cellar, place the roots on a layer of peat or sand. Leeks store well at 0-2 C. They can also hibernate in the garden without being removed. As the frost begins, they must be covered with needles.
